Is it possible to change fields of already existing codes through the web application? I’d like to change the salutations in the image below. If this can only be done by editing code, any idea what folder these files are in?

I’m not sure you can do it thought web application.
However you can change adding new option on this file
modules/abs/axelor-base/src/main/resources/views/Selects.xml
